The T-bone is a very large and tasty steak made up of two cuts of steak separated by a T shaped bone (thoracic vertebrae bone). This steak offers the best of both worlds: the taste of the sirloin and the tenderness of the fillet. T-bone steaks with larger pieces of Fillet are cut from the end of the short loin and are called Porterhouse steaks.

1. Grab a steak from your stash and place it in a zip-top bag. Squeeze out as much air as possible and seal the bag. 2. Place the steak in a large bowl. If you're thawing more than one steak, you can speed up the process by giving each steak its own bowl. Fill the bowl or bowls with cool water, not hot or even warm water. Cool water is safest.

Preheat your cast-iron grill pan over medium-high heat. Once heated, place the steaks and add the fresh herbs and garlic to the pan. Cook for approximately 3-4 minutes per side for medium-rare. After that, place a tablespoon of butter on each side of the pan. Drizzle the melted butter over the steaks using a spoon.
Rub the steak all over with a good lug of olive oil and a good pinch of sea salt and black pepper.
